Ladurée Opens in Singapore!

Singaporeans aren’t you lucky! If you love macarons and are heading to / living in Singapore then life is about to get well, a whole lot sweeter for you!

Ladurée (the French macaron artisans) opened doors to the first Ladurée boutique in South East Asia, at Ngee Ann City in Singapore’s famed Orchard Road. I guess that’s just another reason for me to love that great city/country even more!

Recently, I wrote a post Ladurée Brings French Macarons To Westfield Sydney, Australia! about Ladurée opening a macaron shop in Sydney Australia. Naturally, there are many macaron bakeries in Sydney but there is something magical about Ladurée macarons … and people were lining up for up to 90 minutes to experience the magical bites of heaven.

So, knowing the Singaporeans and their taste for good (sweet) food (confections) I wouldn’t expect anything less…

I have read the announcement here, where they also include a brief Ladurée macaron story which I thought you might enjoy:

The Ladurée macaron story

Louis-Ernest Ladurée, a French artist of versatile interests ranging from writing to pastry-crafting, invented the original macaron but unfortunately had his original shop burnt down during the Paris Commune of 1871. In the 1930′s, his second grandson Pierre Desfontaines rose to fame by sticking two macaron pastries together with a flavored ganâche and creating the modern double-decker macaron as we know it!

His gastronomical success was complemented by the genius idea of turning part of his shop into a tearoom. At a time when women were not allowed into cafés and had to keep to the seclusion of their homes, the Laduree tearooms became the bourgeois ladies’ new gourmand social venue.

Wow – what a great story! Hope you have enjoyed it.

I guess the macaron is only increasing in popularity, which is why The Macaron Master is so ‘in fashion’ right now! How does one feed Hollywood A-listers? I’m sure that was not an easy order to fill! Hollywood … the red carpet … the Oscars. Gosh! How do you stay calm and collected let alone composed while making all the food preparations? Not easy, I guess!

The chef, Wolfgang Puck and his culinary team of 350 cooking specialists were up to the challenge…

One report tells that the chef’s grocery list included 20 pounds of black and white truffles,  600 Maine lobsters, 1,200 stone crab claws, 1,000 pounds of chocolate and 1,600 pounds of butter. Speaking of luxury… Well, I wish I was invited!

Apparently, the menu included 6,500 wood fire Oscar-shaped flatbreads, chestnut tortellini with black truffles, potatoes with caviar and 1,500 bottles of bubbly!

Of course, the menu wouldn’t be complete without a side of macarons – those luxurious bites of heaven that even Hollywood’s high-rollers can’t resist!

Well, the concord grape macarons look … sensational! I love the vibrant colors. Not sure if I would eat them though…it takes a substantial amount of food coloring to achieve those hues. They do look great – luxuriously great!

No wonder some stars were falling up stairs!

Pig Blood Macaron! (Macaron de caza)

A what…?!?!? Yes, you have read that correctly. Apparently some top chef decided to make a totally unique macaron… Andoni Luis Aduriz of Mugartiz, decided to add a new item to their famous menu: pig’s blood macaron.

While the cute macarons may appear to be made of chocolate, it’s exterior is made of pig’s blood, almonds and egg whites. The filling is made of partridge and liver.

This wild idea shows there is no limit to the macaron. In fact, you can use your imagination and come up with new filling and flavor variations.

Game enough to try this macaron? Be careful, it may not be for you. Hunting for ingredients can take you way out of your comfort zone, as this video shows.

What is macaron ganache?

Macarons are two delicious melt-in-your-mouth cookies sandwiched together with a filling. You can color and flavor macaron shells but usually the flavor is in the filling.

There are different macaron fillings from ganache to buttercream to jam, lemon curd, cream and even (are you ready?) mascarpone cream.

Today, I will talk about ganache filling. Macaron ganache filling is made from chocolate and thick cream. You can use milk, white or dark chocolate. Personally, dark chocolate is my favorite but white chocolate gives a delicious contrast of flavors to some macarons, for example, pistachio macarons – yum-yum!!

When piping or spooning ganache filling onto macaron cookies be sure that the filling reaches right to the edge, and it’s thick enough so you can taste it but won’t squash when you take a bite. That’s the trick. The right consistency is important here.

The right macaron filling is light, creamy, and slightly firm. The Macaron Master (TMM) shows how to achieve the right consistency, texture and flavor.

Now you can flavor macaron ganache filling or use it as is. Once again, TMM provides many delicious ideas. Basically, to go beyond the chocolate taste you can flavor the ganache with coffee, spices and even alcohol. You can also infuse the cream with herbs, spices, lemon zest, and even tea.

HOT TIP: Usually, chocolate keeps well. However, because ganache filling is a mixture of chocolate and cream, and cream contains some water, all this reduces the shelf life of the filling. If you want to prolong the shelf life of the ganache then replace the cream with evaporated milk. It won’t taste just as good but it will be close… and it will extend the shelf life of the ganache!

Without the right filling, macarons don’t taste quite right. So, be sure to choose the right filling, to complement the shell and give you a taste sensation!

Lanvin’s Master for Ladureé Macarons

If you are in France then head over to Ladurée … no run there! For a limited time you can grab 8 pieces of heaven packaged in a stylish box created by a fashion genius, Alber Elbaz.

The cute, collectible boxes are covered with playful sketches and adorned with a red grosgrain ribbon. Can’t see the ribbon but they say it’s there!
